The sales figures of the deep-frying sector turn out to be much higher than had been thought for years. The total turnover is at least € 1,2 billion. Professional association ProFri managed to get these figures out in collaboration with CBS.
The Association for Professional Deep-Fryers (ProFri) concludes after research that the Dutch deep-frying industry is much larger than has been estimated by several research bureaus over the past 10 years. There are not 4800 professional frying companies, but approximately 5650.
The combined turnover of these frying companies is at least €1,2 billion. Previously, annual turnovers between €600 and €900 million were assumed.
Do not grow rosy
The turnover of ProFri members has grown by almost 2010% since 20 despite the crisis, which severely affected the catering industry and with some delay also in the cafeterias.
Yet Frans van Rooij, director of ProFri, finds this growth insufficient. "Over the entire period, that is less than 3% per year. Since the price increases have not been settled, the actual growth is even lower. No, I don't think that is rosy," he says in Frituurwereld magazine.
Concerns about negative image
Another concern is the decrease in the number of visitors. Many consumers are turning away from the deep-frying industry because of its allegedly negative image. "We object to the image, but as an association we are doing everything we can to change that. The fact that we constantly emphasize that chips, croquettes and other fried delicacies have nothing to do with fatty and unhealthy food may be factually correct, public opinion won't be quick to accept this."
