DCA introduces benchmark for Cagliata

DCA Market Intelligence (DCA MI) is expanding its leading dairy quotation offering with the introduction of the weekly DCA benchmark for Cagliata. With this new quotation, DCA MI offers even more complete coverage in price transparency for the milk valorisation chain, by publishing 26 quotations for dairy products and semi-finished products every week. The first official quotation for Cagliata was published by DCA MI on its own website this Thursday 9 January 2025. exclusive dairy platform and comes to €4.510 per tonne.

Cagliata is a semi-soft cheese made from pasteurized cow's milk, with a fat content of 25-28% and a moisture content of up to 45%. The product is popular for its versatility in the food industry. It is a semi-finished product for the production of mozzarella, ricotta or cottage cheese. It is often used as an ingredient in the production of processed cheese, pizza cheese and other cheese products that can be easily processed and adapted to specific needs. In the food industry, Cagliata is valued for its consistent quality and versatile application possibilities.

The first official public quotation is slightly lower than the price of the past weeks.
