The movement in the dairy market this week is in the liquid part. But it's not all going in the same direction. The undertone seems negative, but there are also products that avoid it. Everything is calmer on the solid dairy market, with prices rising slightly overall.
The spot market for raw milk is characterized by a generous supply of products and simultaneously stagnant sales. That creates pressure and lower prices. In general, slightly less milk and concentrate is required for the fresh market, while less product also crosses the Alps to Italy. As a result, less milk is demanded from central and northern Germany in the south of Germany and sales are stagnating. Meanwhile, a relatively large amount of milk and concentrate is also coming onto the market from France. However, this product is not accepted by all buyers.
Butter no further up
The butter price, on the other hand, does not move. The DCA quotation is even falling slightly this week, after a previous wild week in which the price first rose by about €1000 and then fell again by a few hundred euros. For now, the butter price is at least relatively stable.

There is an upward trend in milk and whey powders. Prices are slightly higher for whey powders and whole milk powder, but a stronger increase can be observed for skimmed milk powder. It does happen in a 'thin' market. Trading is very quiet and the undertone remains expectant.
The mozzarella price also continues to fetch a price of above €3.000 per tonne. There is no certainty that prices will remain the same, because there is still a lot of extra milk to come. However, the market situation is slightly more favorable at the moment. However, the yields remain below the level of the milk prices paid to dairy farmers.
